There’s plenty of low carb pancake recipes on the internet and, since I’m a big fan of those, I had to put together some of them and make my own recipe so that I could have the closest to a, let’s say, normal pancake.
I picked up this recipe from Try Keto With Me and I just made a few adjustments on the ingredients and quantities as I wanted to make a peanut butter pancake.
Peanut Butter Pancakes:
- 100gr ricotta
- 4tbsp peanut powder
- 2 eggs
- 2tsp baking powder
- 10gr chopped dark chocolate
- almond milk, if needed
- Mix ricotta, peanut powder, eggs and baking powder on a blender.
- If needed, add almond milk (batter shouldn’t be too liquid)
- On a non stick pan, put some chocolate on the top of the batter, cook.
You can’t have pancakes without some sauce, but you can’t have maple syrup so I’ve made a caramel sauce and some cinnamon butter. OMG! You should do it! If you’re into the salty & sweet, just grill some bacon and crumble it on top of the pancakes – just makes everything better.
If you’re already scared about how many carbs, don’t be. It has only 7gr of net carbs and it makes 6 medium size pancakes, enough for two people.
This recipes is good even if you’re not doing keto. You just need to make sure you pick the right toppings to make your healthy version.
