Oatmeal Cookies

You all know my favorite dishes are desserts – or you can just offer me some bread and I’ll be happy. Although, the most important is to have a healthy lifestyle and this is what we choose to do at home so, whenever I’m craving for something a bit sweet I have to create my own recipes.

One of these days I wanted to bake some cookies but all the recipes called for huge amounts of nut butters and the ones that didn’t use nut butter don’t normally give you the results you’re looking for in a cookie. That being said, I decided to go put some ingredients together and hope for the best. Let me tell you, I was very sucessfull and the hubby even said they were the best healthy cookies I’ve made so far.


  • 150gr oats
  • 1egg
  • 32gr melted cocnut oil
  • 2tbsp Swerve or Stevia
  • 1tbsp vanilla extract
  • 1tsp baking powder
  • pinch of salt
  • dark chocolate chips


  • Blend 70gr of oats on a food processor until you have a fine consistency.
  • On a bowl mix all the dry ingredients.
  • Add the melted coconut oil once it has cooled down and the dark chocolate chips.
  • Put it on the fridge for 20min.
  • Remove from fridge, make small balls, press it and bake it for 10min at 175.

When you remove it from the oven, they’ll still be a little soft but if you let them rest – I know, it’s so hard – you’re going to have a slightly crispy cookie with a very oat flavor and some avnilla touches.

The results have been always so positive that, since then, I have made multiple batches.

The nutrional values are just for reference as these might be slightly different depending on the ingredients you are using, although they should be very similiar.
